Spaghetti Sardines and Homemade Ice Cream

This weekend’s experiments are Spaghetti Sardines and Homemade Ice Cream!

For the Spaghetti Sardines, I used Ligo Sardines in tomato sauce (the red one so it’s spicy but not really). All I needed were pasta, sardines, onion, garlic, calamansi, and tomatoes.

  1. Saute garlic and onion with butter.
  2. Add the tomatoes and mash it with the garlic and onion.
  3. Add the sardines and crush it.
  4. Add the juice of the calamansi (or lemon).
  5. Mix with pasta then serve with cheese.

Didn’t like it, honestly. My Tuna Spaghetti was okay, but this one is edible but not something you’d prefer to eat again. I guess this ends my chronicles of trying to do revolutionary things with canned goods 😂 It just doesn’t work but hey, it was fun.

The best part is this: the HOMEMADE ICE CREAM.

I went to the grocery with my mom for the first time in a long while and bought my ingredients. Here’s how to do it:

  • Refrigerate 2 packs of all purpose cream (I used Nestle’s) and 1 pack of condensed milk (Alaska). Don’t let them freeze, just really cool.
  • If you have a mixer, put the all-purpose cream in it and mix until it forms soft peaks then add the condensed milk, mix again. I didn’t have a mixer and I wasn’t sure if it was okay to use blender for it (since blender had higher mixing speed) so I just whisked it with a fork 😂 Mine didn’t really formed soft peaks but it turned out okay.
  • Add vanilla extract (a 3/4 of a tablespoon will do).

  • Add crushed Oreos and chocolate chips.

  • Place it in a container with lid and refrigerate overnight.

Here’s the result:

It was SUPER CREAMY and I loved it.

For the syrup, I melted some chocolate chips with full cream milk. If you don’t have a double boiler, the primitive way of doing it is putting the chips in a glass cup and put that glass cup in a casserole with water then heat it. This is so we don’t burn the chocolates.

Best served in small servings because man, it’s really creamy. I’m thinking of adding full cream milk to the all-purpose cream and condensed milk mix to make it less concentrated but I’m afraid it won’t form into a solid ice cream. Or was it really necessary to whisk it until you see soft peaks? Hmm.

Lovely, lovely! The all-purpose cream and condensed milk mix is the base for the homemade ice cream. You may add fruits or jams instead of Oreos. Buying ice cream in the supermarket is definitely cheaper, but where’s the fun in that?

It’s Pasta Day!

I guess it’s a thing now— me cooking pasta when everyone’s at home. I’m not complaining though. Next week, I’d try a new recipe, Spaghetti Sardines (wish me luck!).

It’s spicy tuna spaghetti again, the same one I’ve written about in my previous post, Pasta Recipes. My family prefers it than the creamy macaroni. I tried adding butter and bay leaves to it and more tomatoes (although I wished I added more than that since I had more pasta too).

Pasta Recipes

Taking just twelve units (I’m graduating, hopefully) this semester, I only have classes every Tuesdays and Thursdays of the week. That leaves me a lot of free time. I recently got back to trying out different mediums of art and cooking too. So far, I’ve made two pasta dishes that are edible. My family and I were able to eat it.

Pasta Recipe #1: Spicy Tuna Spaghetti

This was a product of total boredom. I didn’t have anything to do last weekend so I just went through our supplies. The initial plan was Spaghetti Sardines but that’s way too tricky to make, so I settled with this. I would have loved it better if it were tuna in water but the rest of my family loved the flavor of the tuna in oil.

  1. Saute onion and garlic in oil.
  2. Add sliced tomato.
  3. Add canned tuna in oil and red pepper. Season with pepper and salt.
  4. Add cooked spaghetti pasta.
  5. Serve with cheese on top.

Pasta Recipe #2: Cream Macaroni

Cooked this one last Friday for my mom and I’s breakfast and lunch. I sent the pic to our family group chat and my sister (who was at work that time) told me to cook it again for Saturday. I did and they liked it, although I still find it difficult to hit the right seasoning. It’s bland but with the right amount of bacon and cheese, it’s perfect.

I call this pasta sitting on cheese.

  1. Fry bacon bits until crispy. Set aside.
  2. Saute onion and garlic in oil and butter.
  3. Add all purpose cream and water. Let it simmer then season with pepper and salt.
  4. Add macaroni pasta and bacon bits.
  5. Add cheese and heat until it melts. When serving, you may add some bacon bits and cheese for toppings.
